Frosted Meatloaf

1/2 cup ketchup  
2 tablespoons brown sugar packed
2 tablespoons apple cider vinegar  
1 teaspoon hot sauce optional
8 tablespoons butter divided
1 onion chopped fine
3 cloves garlic minced
2/3 cup saltines crushed, ~17 square or ~19 round
1 cup milk  
1 pound ground pork  
1 pound ground beef  
2 eggs  
1 egg yolk  
1/3 cup fresh parsley chopped, can substitute 1 tablespoon dried
2 teaspoons dijon mustard  
2 teaspoons Worcestershire  
1/2 teaspoon thyme  
1/2 teaspoon salt  
1/2 teaspoon pepper  
2 pounds potatoes peeled and cut into chunks
